Pecan Shortbread Cookies {recipe}

Tis the season for baking all of the yummy things…or in my case cookies!! My favorite kind of cookie to bake is a shortbread cookie, especially a pecan shortbread cookie! They are so easy to make, only require a few ingredients and are really hard to mess up…all of the things I love in a one recipe. HA!

Shortbread cookies are year round cookies but I’m not much of a baker and had the worst craving for one the other day so I made a big batch of them and then since I have weight loss goals I ate a few and then gave the rest of the cookies away. It was either that or go all Miranda from Sex and the City and dump them in the trash can and pour dish soap on them. Anyone remember that episode? It’s one of my faves! HA!

When I say this recipe is easy to make and only requires a few ingredients I mean it! It’s only got five ingredients that you whip together, throw in some pecans, mold into cookies and bake!

For these cookies I chose to mold them into just a plain, round cookie however I have seen people bake these into balls and half moons. It’s really just however you want to do it! The most important thing to remember is that these cookies don’t expand when you bake them so don’t worry about placing them too close together on your cookie sheet or thinking they aren’t done when you check on them!

I think my favorite part of making these cookies, and the messiest, is rolling them in the powdered sugar when they are fresh out of the oven! It’s one big, delicious, mess!

Pecan Shortbread Cookies
Servings
Ingredients
  • 2 cups butter softened
  • 1 cup powdered sugar
  • 2 TBSP water
  • 4 cups flour sifted
  • 1.5 cups pecans chopped

  • 1 cup powdered sugar
  • 2 TBSP water
  • 4 cups flour sifted
  • 1.5 cups pecans chopped
Instructions
  1. Preheat oven to 300* and line a baking sheet with parchment paper.
  2. Cream butter and sugar until fluffy.
  3. Stir in water and vanilla.
  4. Add flour gradually until everything is mixed.
  5. Stir in pecans by hand.
  6. Roll dough into balls and place on baking sheet. Flatten by hand if you want.
  7. Bake for 18-20 minutes, or until done.
  8. While cookies are still hot out of the oven, roll them in powdered sugar until coated on all sides and set aside to cool.
  9. Enjoy!

    Shortbread cookies are a favorite. They can be plain or add pecans like you did which makes them really good. I even have pecans on hand to make these today.
