Chicken Enchilada Casserole {recipe}

I have been on such a comfort food kick lately. I made my Cheesy Chicken Spaghetti this weekend as my meal prep for work and Monday night I made this super easy, super yummy Chicken Enchilada Casserole!

I had some leftover chicken from my chicken spaghetti and a bottle of Trader Joe’s Red Enchilada Sauce that had been sitting in my pantry since my last trip to Dallas that I needed to do something with so I decided to make a modified version of my Zesty Salsa Chicken Casserole but with enchilada sauce. Genius, right?? Yassssssss.

It’s been so cold and rainy for the past two weeks that I sort of fell off the “eating right” train and fell onto the eating ALL THE pasta, chips, carbs, etc train. Ugh. Anyone else?? Fingers crossed the weather gets better and makes me want to get out of the house and eat better. On the plus side I have been to the gym three times in the past week and I took Sophie to the park and walked her one day! You know, the one day it was 70* outside. HA!

But seriously, this recipe is so easy to make and is super filling. If you are a Mexican food fanatic like me then you should definitely try it!! YUM!!

Chicken Enchilada Casserole
Servings
Ingredients
  • 2 lb boneless skinless chicken breasts
  • 1 bag Doritos
  • 1 can black beans drained
  • 1 can whole kernel corn
  • 2 cans red enchilada sauce
  • 4 cups Mexican bland shredded cheese

  • 2 lb boneless skinless chicken breasts
  • 1 bag Doritos
  • 1 can black beans drained
  • 1 can whole kernel corn
  • 2 cans red enchilada sauce
  • 4 cups Mexican bland shredded cheese
Instructions
  1. Marinate chicken in red enchilada sauce and bake in oven at 350* until cooked through.
  2. Shred chicken and place in big mixing bowl along with any extra enchilada sauce.
  3. Pour drained black beans and whole kernel corn into bowl with chicken and enchilada sauce and mix up well.
  4. In a buttered baking dish take half of the Doritos, crush them up and place them in then bottom of the dish. Layer half the chicken mix on top of the Doritos and then top with half the shredded cheese.
  5. Repeat.
  6. Bake at 350* for about 20 minutes or until the cheese is melted and bubbly on top.
  7. Enjoy!

    That looks so good! I love casseroles, and I love enchiladas. This is perfect for me. Also, anytime you can make a recipe into a casserole, you should do it!

    Chicken enchiladas are one of my favorite meals. I love the idea of turning it into a casserole. It makes it a lot easier to eat.

    I have made chicken into Lodus many many times but I’ve never thought about making it as a casserole. What a great idea. That will give you a lot of leftovers and it tastes wonderful.

    We make a chicken enchilada casserole similar to this a lot around here too. It’s SOOOOO yummy, and super easy. Everyone always likes it.

    That looks so good! I love that you used corn and black beans in the recipe! I love black beans! I am sure this was soothing on a cold day! Glad you had one nice day to get out lol – we need the weather to make up its mind that it is Spring!!

    Because of our work schedules, we do a lot of casseroles (we love leftovers!) I’ve never done an enchilada one though – so we’ll definitely try this! Looks so yummy!
