Zesty Salsa Chicken Casserole

Last week I received this huge package in the mail that I didn’t remember ordering. That is a rare occurrence because I always remember what I order! Imagine my delight when I opened it and found it full of Zesty Salsa Pringles Tortillas!! YUM!!

Side note- my niece, Paycen, saw this picture on my phone and started squealing and saying “tummy!!” (yummy) and when I asked her what she was looking at she showed it to me and said “TIPS!!” (chips) That sweet girl loves her some chips almost as much as I do…LOL!!

Y’all know I love me some chips and salsa but these new Zesty Salsa Pringles Tortillas are just the best of both worlds! Pringles Tortillas are crunchy corn tortilla crisps, in the iconic Pringles shape, loaded with delicious, taste bud-tingling flavors. They have some serious flavor and the only thing I could think of was how to incorporate them into a recipe!

I gathered up a few of my favorite ingredients…

and the BOOM!! Zesty Salsa Chicken Casserole was born!!

 Look at all that cheesy goodness, my mouth is watering right now just thinking about it!

I love making casseroles because they are always good when reheated, plus I have enough food to eat for a couple of days. Being a single girl has it’s perks but cooking for one is almost impossible for me. So I like to cook a lot and eat the same thing for a few days. Hey, it’s what works for me!

Zesty Salsa Chicken Casserole

Ingredients
  • 1 lb chicken tenders
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can rotel
  • 2 cans Zesty Salsa Pringles Tortillas
  • 2 lbs shredded cheese

  • 1 lb chicken tenders
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can rotel
  • 2 cans Zesty Salsa Pringles Tortillas
  • 2 lbs shredded cheese
Instructions
  1. Boil chicken and shred.
  2. Mix the cream of mushroom, cream of chicken, rotel, and chicken in a big bowel until blended.
  3. Crush a can of Zesty Salsa Pringles Tortillas and layer in the bottom of a baking pan, I used a 9x13 pan.
  4. Layer half of your chicken mix on top of the Pringles.
  5. Layer half of your shredded cheese on top of the chicken mixture.
  6. Repeat with remaining ingredients.
  7. Bake at 350 for 20 minutes.
  8. Enjoy!

    I think I just might have everything on hand to make this.. except the Pringles. The biggest challenge will be making this without consuming all of the chips first.

    I love casseroles, too. There’s not a lot of dishes to wash and I always hope for leftovers. This one looks amazing! I’ve got to try the Pringles tortilla chips AND your casserole. I love spicy!

    Casseroles are so easy to make and can be combined with so many different things for fun combinations. I’d love to try this recipe but without the zesty sauce, I’m not a fan of anything spicy.
