Garlic Chicken and Quinoa {recipe}

I’m sure you all know by now that I love a quick, easy, healthy, hearty meal. Quick and easy because who has time for anything more complicated than that and healthy and hearty because I do want to eat good and I want it to fill me up.

Some staples I always keep on hand are grilled chicken (I usually marinate it in fat free italian dressing and grill it indoors on my George), steam in the bag veggies (broccoli, brussels sprouts, corn, green beans, and green peas are my faves), brown rice, and all sorts of condiments. I usually have some sort of combination of those things for dinner every night. One of my favorite meals with those ingredients is my Spicy Ranch Chicken and Rice. It is so so so good and so quick and easy to make. Win Win, right? Right.

Well the other day I was out grocery shopping and the store I was at was out of my usual plain brown rice!! How does that even happen?? Ugh. Fortunately for me I decided to check out the other rice selections and found this little gem…

…Uncle Ben’s Quinoa and Brown Rice mix with garlic. It sounded like it might be pretty good so I grabbed it and decided to try it for myself.

Can I just get a whoa?? This stuff is AMAZING!!! It’s the perfect mix of brown rice to quinoa and has just a hint of garlic, it’s not super overpowering like some garlic dishes tend to be. So for dinner that night I decided to mix it with my grilled chicken, throw in some green peas and viola! Garlic Chicken and Quinoa was born.

Now I realize it has more things that chicken and quinoa in it but that’s the only name I could think of at the moment and have been calling it that ever since. You can put pretty much any veggie in this dish, I have down broccoli and corn before but I like it best with green peas. And I don’t even like green peas, LOL!!

Ingredients
  • 2 chicken breasts grilled
  • 1 bag Uncle Bens Brown Rice and Quinoa with Garlic
  • 1 bag green peas steamed
  • 2 tbsp fat free italian dressing

  • 2 chicken breasts grilled
  • 1 bag Uncle Bens Brown Rice and Quinoa with Garlic
  • 1 bag green peas steamed
  • 2 tbsp fat free italian dressing
Instructions
  1. Grill chicken, chop, and set aside.
  2. Make rice according to directions on bag.
  3. Steam green peas in bag.
  4. Mix all ingredients, top with fat free italian dressing
  5. Enjoy!

    That sounds so amazing! I love quinoa. It’s my new favorite side dish. I use it with chicken, beef, pork, and all kinds of veggies.

    This looks awesome. I have bought Quinoa before, but have not had much luck with cooking it. This looks like a much easier way to do it.

    Oh yum, I’m going to have to try this out. IT would make a great last minute dinner. I do really like those rice mixes.

    That looks like a healthy and delicious meal. I’ll give quinoa a try and maybe add some pasta to it, and maybe I’ll get used to the texture I heard it’s good for you.

    I use this stuff too! My boys actually love rice and Uncle Ben’s has some really good flavors and pairings. Its quick and easy without a lot of time spent over a hot stove!

    Uncle Ben’s Quinoa and Brown Rice mix with garlic is so delicious. My family loves it. It makes a great side dish that is so simple to get ready. I love the Uncle Ben’s Basmati rice as well.

    I was thinking: That doesn’t look like Quinoa then I saw it was a combination of quinoa and brown rice. I would be all over that dish. I just wish they came in larger portions. There is never enough it is SO GOOD

    Looks like a great, fast, delish mid-week meal to me. I like Quinoa, oddly I just don’t prepare it very often, I will have to add it to the shopping rotation.
