Spicy Ranch Chicken and Rice

When I was in respiratory therapy school we did a lot of clinicals and I was usually trying to be healthy, plus I was broke, so I usually just brought a Lean Cuisine or a salad and a Diet Coke to eat for an entire 12 hour shift. Let’s just say I didn’t know much about eating to fuel my body and I was hungry a lot. HA! One of my clinical rotations was on an ambulance and they guys I rode with were so awesome! They taught me so much but one of the most important things they introduced me to was Hidden Valley’s Spicy Ranch Dressing.

This stuff is so awesome!! I eat it on everything…salads, chicken, pizza, whatever! If you can put regular ranch dressing on it then Spicy Ranch tastes even better. Try it, you will thank me later.

The recipe I am about to share with you was completely inspired by my love of Hidden Valley Spicy Ranch. I usually have all of the ingredients on hand and it’s super quick and easy and filling and you just can’t beat that. It is a go to on nights when I get home late from work and need something hearty but semi-healthy to eat. So without further ado I give you…Spicy Ranch Chicken and Rice!

This may not be the best pic but you really need to try it. I love the combo of veggies, brown rice, and grilled chicken. And the Hidden Valley Spicy Ranch of course!! YUM!!

Spicy Ranch Chicken and Rice

Ingredients
  • 4 boneless skinless chicken breasts
  • 1/2 cup fat free italian dressing
  • 1 bell pepper chopped
  • 1 onion chopped
  • 1 cup mushrooms chopped
  • 2 cups brown rice
  • 2 tbsp Hidden Valley Spicy Ranch
  • 1 tsp cajun seasoning

Ingredients
  • 4 boneless skinless chicken breasts
  • 1/2 cup fat free italian dressing
  • 1 bell pepper chopped
  • 1 onion chopped
  • 1 cup mushrooms chopped
  • 2 cups brown rice
  • 2 tbsp Hidden Valley Spicy Ranch
  • 1 tsp cajun seasoning
Instructions
  1. Marinate chicken in fat free italian dressing, grill chicken, set aside.
  2. Chop bell pepper, onion, mushrooms and sauté. Set aside.
  3. Cook brown rice according to package and set aside.
  4. Assemble dish. Brown rice on bottom, then grilled chicken, and then veggies. Mix well and then sprinkle with cajun seasoning.
  5. Top with Hidden Valley Spicy Ranch and eat!
  6. Enjoy!!

    Thanks for sharing this recipe. I do a lot of cooking with Ranch, but I’ve never seen this kind before. I’ve never tried ranch in rice, either.

    This dish looks and sounds absolutely delicious. The kids eat Ranch dressing on everything from chicken fingers to chips. I bet it smells divine while cooking as well.

    I feel like chicken and rice is so great because adding veggies and seasoning can change it up. I always have brown rice on hand. Tonight we actually had chicken with pineapple chunks and onions sauted together with brown rice. So easy and yummy.
