Italian Chicken Spaghetti with Protein Pasta {recipe}

Happy Wednesday! I’m back with a recipe post (for my super yummy Italian Chicken Spaghetti!!) for the first time in forever! Remember when I used to post recipes all the time? I guess that’s back when I loved to cook and bake and these days I’m all about ordering from my meal prep service…HA!

Well the other day I was at Walmart and saw this Barilla Protein Pasta and decided it was time to make something more elaborate than a sandwich. I am a master Cheesy Chicken Spaghetti maker and so I decided to try my hand at Italian Spaghetti but with the above mentioned protein pasta rather than regular pasta.

Now I have tried whole grain and protein pasta before and they have not been good at all. The protein pasta I used from Barilla actually tastes like real pasta!! No funky texture and no weird aftertaste, it just tastes like regular old pasta. I think it may be my go-to fro now on because it’s not that much more expensive than regular pasta.

Anyway, back to the recipe! The first thing I do when I start this recipe is get my pasta water boiling. The pasta doesn’t take long to boil but it seems like it takes forever for the water to get to boiling. HA!

The next thing I do is get my chicken ready to bake. You can totally just bake it plain but I’m not about that plain baked, boring chicken life. I like to season mine with salt, pepper, garlic powder, and onion powder. My chicken tastes amazing on it’s own and even better in this pasta!

While the pasta water is heating up and the chicken is baking I chop all my veggies and get the onions and bell peppers sautéing. I mentioned this in the recipe post below but I don’t let my veggies get as soft as I normally would in this recipe because it makes a LOT and I know I will be reheating it at some point and don’t want them to be soggy and gross later. Your future self will thank you for this. LOL

Everything always seems to come together at about the same time and you can throw everything in a big ole mixing bowl and serve it that way or you can be like me and layer it all in a bowl…pasta, veggies, chicken…and then top it with a splash (or more!!) of the Olive Garden Signature Italian Dressing and a little parm cheese. YUM.

Italian Chicken Spaghetti with Protein Pasta
Servings
Ingredients
  • 1 box Angel Hair Protein Pasta
  • 4 boneless skinless chicken breasts
  • 1 Yellow Onion chopped
  • 1 bell pepper chopped
  • 5 oz spinach raw
  • 12 oz Cherry Tomatoes halved
  • Olive Garden Signature Italian Dressing
  • grated parmesan cheese

  • 1 Yellow Onion chopped
  • 1 bell pepper chopped
  • 5 oz spinach raw
  • 12 oz Cherry Tomatoes halved
  • Olive Garden Signature Italian Dressing
  • grated parmesan cheese
Instructions
  1. Preheat oven to 350*.
  2. Bake chicken (season if you like) for 25-30 min, or until it's done. Set it aside to cool and when it's cool enough chop into bite size pieces.
  3. Boil Pasta until done and set aside.
  4. Sauté onions and bell peppers in EVOO until they are at a texture you like, I don't like mine super soft because I know I will be reheating this recipe. Add in spinach and cherry tomatoes until spinach is wilted.
  5. When veggies are done take off the burner and let them sit for a few minutes.
  6. Plate the pasta, chicken and veggies and top with a splash (or more!) of the Olive Garden Signature Italian Dressing and grated parmesan cheese.
  7. Enjoy!

    This looks like the perfect pasta dish. The protein pasta looks like the real deal so I need to try it. I like all the fresh veggies in your pasta dish. Yum!

    That looks really good and I bet that is a great way to get my family to eat vegetables. They really have a hard time with foods that don’t look good loaded with veggies but this looks amazing.
