Happy almost February!! February is my FAVORITE month of the year!! Not only is it my birthday month, but it’s also Abraham Lincoln’s birthday month (fun fact – I share a birthday with Abraham Lincoln and therefore he is, by default, my favorite president)! And of course February is also Valentine’s Day!!! For someone who is chronically single I sure do love Valentine’s Day! I love the decor, the sweets, the atmosphere of love, the chocolate, all of the pink and red everything, and did I mention the sweets??
With both Valentine’s Day and my birthday February is a month of eating all of the sugar filled things for me. I have been pretty good about my eating over the holidays but recently I have gotten a major sweet tooth. I got the worst craving for something sweet the other day so I made a Strawberry Crumble and it was spectacular!!! If I do say so myself…
Crumbles are one of the easiest deserts you can make. The kind I make only require three ingredients, four if you like yours topped with ice cream (and I do) and take less than five minutes to put together. They look fancy and like you spent a lot of time slaving away in the kitchen when in reality it’s about 5 minutes of prep and about 30 minutes in the oven and BOOM! Done.
Crumbles look kind of messy when plated, let’s be real most of my recipes look messy when plated but it’s the taste that counts. Right? This particular crumble is a Strawberry Crumble but in the past I have made Peach, Apple, Cherry, Blueberry, etc. You can make whatever “berry” you want, or even pumpkin although a Pumpkin Crumble is a little more complicated to make.
The full recipe is below but basically you just take a can of pie filling and pour it into the bottom of a baking dish, pour half of a butter yellow cake mix on top and then top that with pats of butter. Bake at 350* for 30 minutes and that’s it. Super easy, super yummy.
And did I mention I like to top mine with ice cream? My favorite vanilla ice cream is Blue Bell’s Homemade Vanilla. I’m not a big “vanilla bean” fan so this has always been my go-to for vanilla ice cream.

Ingredients

- Preheat oven to 350*
- Pour entire can of pie filling into a glass baking dish.
- Sprinkle half of the dry yellow cake mix (I prefer butter yellow cake mix) on top of the pie filling.
- Cut the butter up into small pats and put all over the top of the dry cake mix.
- Bake on 350* for 30 minutes or until the top of the crumble is golden brown.
- Enjoy!

I love a great tasting strawberry or even a cherry crumble. When you add the ice cream on top, which has to be vanilla oh man it that ever good. Doesn’t take long to make which is nice.

Love crumbles. They’re super easy to make and you can use any pie filling. I’ve made it with apple, blueberry and cherry but never strawberry. Your recipe looks so good and that vanilla ice cream! YUMMY!
