I have no idea why but here lately I have been on a baking kick. Now if you know me at all then you know that baking really isn’t my thing. I think the thing with baking is that it’s truly scientific and you have to get all of your measurements correct or it’s going to be a big, fat failure. I am more of a throw it all together and not measure anything kind of cook. Casseroles? Yes. Pasta meals? Yes. Soups? Yes. I can make all of those things in my sleep. Baking things? I’m pretty hit or miss on. HA! So when I tell you that I made the most amazing Butterfinger Poke Cake that you have ever tasted in your whole, entire life then you better listen up because I do not use those words lightly. HA!
Ahhh poke cakes. I have a special place in my heart (and my stomach!) that is just for poke cakes. There is just something about poking all of those little holes in a freshly baked cake and filling them all the the nectar of the Gods (sweetened condensed milk). Am I right? I recently redid my Coconut Cream Poke Cake and it was in that very moment that I realized how much I was holding out on you guys by not telling you about my second favorite poke cake recipe…Butterfinger!
I mean just take a look at all of this sinful yumminess…
…and it tastes even better than it looks!! Trust me on this guys.
PS- do Butterfingers remind anyone else of Bart Simpson? Or am I really just that old? HA! Weirdly enough, I also associate Dr Peppers with Bart too. I really need to quit associating my food with cartoon characters.
One of the things I love most about a poke cake is how moist they are! Yes, I said moist. Gross. LOL! But really though, keeping them covered in the fridge is a must and I think I and this cake in there for a solid week and it tasted yummy until the last piece!
And I may or may not have just admitted to eating an entire cake…OOPS!!
And because this cake wasn’t sinful enough on it’s own I drizzled my plat with chocolate syrup and caramel syrup before plating it. Cause I’m FANCY y’all. Or something like that…
Before I forget I found a bag of Butterfinger pieces in the baking aisle at my local WalMart that I used to top this cake with. If you can’t find those you can always go old school and just buy a couple of Butterfinger candy bars and beat them up, it all tastes the same!
The recipe is below for those who want to try it…
Have you ever made a poke cake??
Do you like Butterfingers??

Delicious! This cake looks incredible! I miss Butterfingers…we haven’t been able to have them around the house because of my kids food allergies. Still grab one now and then when I’m out and about without them though :-)
