Coconut Cream Cake {recipe}

I have been spending lots of time on Pinterest lately. I can’t help it, I’m obsessed! I guess my sweet tooth is raring up it’s ugly little head (or I’m PMS-ing) and so I have been pinning lots of sweet things. One sweet thing I LOVE is anything coconut flavored…I realize that not everyone loves coconut but I sure do! So you better bet when I saw a yummy recipe for a coconut flavored cake I decided to make my own but put a little spin on it…so I introduce to you today my Coconut Cream Cake!!

The thing I love most about this cake is that it’s basically just a yellow poke cake with coconut cream and sweetened condensed milk poured all over it. Don’t know what a “poke cake” is? That’s ok! It’s just a cake you bake and then poke holes all in it and pour some kind of yummy goodness all over it (usually sweetened condensed milk) and let it cool in the fridge until the milk is all soaked in. Then you top it with whatever topping you want!

This Coconut Cream Cake is so freaking moist and rich tasting yet it’s not super sweet, which I am also loving right now. I love sweets, but not if they are overly sweet. Clear as mud, am I right? HA!

I think poke cakes should just be in a class of their own. There are so many that I am a fan of I may just have to make a whole section on my blog about poke cakes. I’m telling you, they are addicting and so so so easy to make! I think my favorite thing to do with a poke cake is take it to a potluck. They are always a hit and making it the night before just allows more time for the sweetened condensed milk to soak in. It’s heavenly y’all!!

This cake is perfect for this time of year (summer) but then I think coconut goes with any season. You could even throw in a little cherry juice and make it really tropical tasting!! I actually may have to do that next, LOL!!

Anyway, the recipe is below and is super simple to follow. I hope you enjoy this Coconut Cream Cake as much as I do!!

  • 1 box yellow cake mix
  • 1 15 oz can sweetened condensed milk
  • 1 15 oz can coconut cream
  • 8 oz Cool Whip
  • 1 cup Cool Whip

  • 1 box yellow cake mix
  • 1 15 oz can sweetened condensed milk
  • 1 15 oz can coconut cream
  • 8 oz Cool Whip
  • 1 cup Cool Whip
Instructions
  1. Mix cake mix according to box and bake until done.
  2. When cake is done and hot out of the oven poke holes all over the top of it and pour the sweetened condensed milk and coconut cream all over the top of the cake.
  3. When cake has cooled down a little bit cover it and put in in the fridge for a few hours.
  4. When cake is cool to touch take it out of the fridge and top it with the cool whip and the coconut flakes and it's done!! I always keep this cake in the fridge so it will stay fresh unless it's eaten in one sitting and then you don't have to worry about it going bad. HA!

    Coconut reminds me so much of the beach! I think this cake is perfect for picnics, bbqs, and gatherings during the summer! I would love to keep the recipe!

    I am not a huge fan of shredded coconut. However, cake is one my weaknesses. :/
