Sweet Potato Hash

Last week I wrote about all the yummy food I was eating and promised to get this recipe to you this week and guess what? I am actually following through! YAY!!

This savory hash can be eaten at any meal, I just chose to eat it for breakfast. This particular day I topped it with two fried eggs and it was amazing!! Not to brag or anything…

The recipe I made also made three other portions which I took to work with me and I just chopped up some turkey sausage and ate it that way. I also love cajun seasoning and put a little of that on it as well.

I ate it for dinner one night and topped it with a turkey burger patty and that was good. I wished I had an avocado to go with it and that would have been even better! I am all about versatile meals that I can eat at any time of the day and for multiple meals (breakfast, lunch, dinner).

I am also confessing that this was my first time to cook with actual sweet potatoes and I shredded them for this hash. It took forever and I think next time I will just chop them up.

Ingredients
  • 2 sweet potatoes shredded or chopped
  • 2 bell peppers chopped
  • 2 onions chopped
  • 1 cup mushrooms chopped
  • 2 tbsp olive oil

  • 2 bell peppers chopped
  • 2 onions chopped
  • 1 cup mushrooms chopped
  • 2 tbsp olive oil
Instructions
  1. Heat olive oil in a pan and chop up all of your ingredients.
  2. Add sweet potato, bell pepper, and onion the hot pan and sauté until onions are almost clear.
  3. Add mushrooms and sauté until soft.
  4. When all veggies are sautéed to your liking, you are done!!
  5. Enjoy

    I love a good hash but I have yet to make one with sweet potatoes. I dont think I have ever mixed a sweet potato and egg together in any recipe other than sweet potato pie. This sounds really good.
