What I’m Eating

So far this week I have talked about what I’m reading, what I’m watching, and what I’m listening to! Now it’s time to talk about what I’ve been eating lately. There is just something about summer and yummy food that go hand in hand. But then I just love yummy food at any time! HA!

I have been trying to eat my version of “clean” which is really just healthier, more filling foods and not so many processed things.

For breakfast I made this fantastic Sweet Potato Hash and fried some eggs to put on top of it. I made enough of the hash that I have also been taking it to work with me but I substitute the fried eggs for a hard boiled egg and some turkey sausage chopped up on top of it. I have the full recipe coming next week.

For lunch and dinner I have been eating a lot of grilled chicken. I love grilling up a bunch on my George Foreman and eating on it for a couple days. I pair it with different things but lately I have loved using fajita spices when I grill it and eating it with sweet potato fries and a chopped up avocado. I seriously love avocado and have found some really good ones at my local Sam’s club!

Another Sam’s staple I get every time I go is Butterball Turkey Burgers. They are so easy to cook and quick and perfect for when I get home from work and don’t have anything prepped. I like to season them with cajun seasoning and top them with a little ketchup and they taste like meatloaf! YUM!

I love to eat out and you don’t have to eat “bad” when you go. I went to Genghi’s Grill with some of my sorority sisters last week and I love that you customize your bowl to what you want. I got chicken, crab, onions, green beans, carrots, spinach, garlic, cajun seasoning, brown rice, and a honey garlic sauce. It was delicious and I’m sure I could have gotten less sauce to make it a little healthier and I may just do that next time I go!

I also love a good sweet treat and am not ashamed to say that one of my faves is cool whip straight out of the tub. So not good for you but I freaking love it. I was looking for my cool whip the other night at WalMart and found a whole selection of Arctic Zero “ice cream”. Normal ice cream has over 200 calories per half cup serving an this only has 75. I tried the cookie dough and actually really liked it!! I will definitely be trying more flavors!!

I love to snack throughout the day and usually go for savory versus sweet snacks. I love the single serve flavored tuna in a bag. My fave flavors are lemon pepper, hickory smokehouse, and sweet and sour. I am a huge popcorn fan and always have a bag of smart pop white cheddar popcorn on me. Boiled eggs are another go-to that I always keep in my fridge.

I recently started drinking Advocare’s Spark for energy because I was seriously crashing in the afternoons and find myself drinking it both in the morning on my way to work and in the afternoon. It’s sweet and I count it as a snack. My fave flavors are Fruit Punch, Grape, and Mango Strawberry. I have also tried Mandarin Orange, Pink Lemonade, and Watermelon and they were pretty good too. I really want to try Cherry but it’s always sold out!!

    I have been on a restricted diet called the specific carbohydrate diet. It helps me with my ulcerative colitis as well as has me dropping pounds, fast. I have been making cookies and ice cream a lot lately but they are healthy sugar & gluten free so there is no guilt:)

    Wow – I do go love sweet potatoes and will have to make the hash – my dogs love also do sweet pots!
    I also go to Sam’s – and love that they have more healthy choices now – I’ll be checking on Arctic Zero “ice cream” and I’ll check out the Advocare Spark –

    Yum – you have me curious about that sweet potato hash. That Asian dish looks tantalizingly delicious – I want some of that right now. Lately, I’ve been eating CRAP. I was on a no-wheat, no-sugar diet and when I went out of town last month – all of that flew right out of the window.

    The best thing you can do is eat well while you’re in college! OMG, I think back on the “poor man’s pizzas” I ate all the time- Toasted Wonder bread, pasta sauce, and shredded cheese was a staple in my diet for years lol. You def aren’t eating Ramen like I used to have to! :)

    I love what am I eating posts. I am always curious as to what people are doing. I have seen that arctic Zero ice cream at the store. I have been super curious about how it was. Nice to know your thoughts.
