- 4 boneless skinless chicken breasts
- 1/2 cup fat free italian dressing
- 1 bell pepper chopped
- 1 onion chopped
- 1 cup mushrooms chopped
- 2 cups brown rice
- 2 tbsp Hidden Valley Spicy Ranch
- 1 tsp cajun seasoning
- Marinate chicken in fat free italian dressing, grill chicken, set aside.
- Chop bell pepper, onion, mushrooms and sauté. Set aside.
- Cook brown rice according to package and set aside.
- Assemble dish. Brown rice on bottom, then grilled chicken, and then veggies. Mix well and then sprinkle with cajun seasoning.
- Top with Hidden Valley Spicy Ranch and eat!
