Chicken & Wild Rice {recipe}

I posted this pic earlier this week on my Instagram and got a lot of comments wanting the recipe so here it is! Not to toot my own horn but when I brought the leftovers to work everyone in the room was wanting a bite. HA!

As I am sure you noticed this recipe contains another Rice ‘N Easy rice mix from Riceland, this one the Long Grain and Wild Rice Mix. I love using these mixes as part of a main dish instead of just as a side. Also, this is not a sponsored post, I just really love Riceland Rice ‘N Easy mixes!

So back to the recipe…this is one of those amazingly simple, throw everything in a dish, stick it in the oven, and forget about it until it’s done. I don’t know about you but those are my favorite kinds of recipes. SO what is it? This recipe is my Chicken & Wild Rice!! I usually serve it with a side of green beans just to brighten up the plate. HA!

To make this super yummy dish you just throw a box of Long Grain and Wild Rice (and it’s seasoning), a can of cream of celery, a can of cream of mushroom, a can of water, and 2 TBSP of melted butter in a bowl and mix it up. At the same time you take another 2 TBSP of melted butter and rub it all over a glass baking dish and then put about a third of the mix on it and then top it with the chicken. The recipe calls for chicken breasts but I used tenderloins and it turned out just fine!

You top the chicken with the rest of the mix, tightly wrap the dish in aluminum foil, and bake it at 375* for 90 minutes, no peeking!! When you pull it out and remove the foil you will be greeted with a bubbling yumminess that you won’t want to quit smelling. It’s that good. Pinky promise!

Let is sit for a few minutes, plate it, and eat it! The leftovers are just as good and juicy. Trust me on this one.

  • 1 lb boneless skinless chicken breasts
  • 1 box Long Grain and Wild Rice Rice 'N Easy mix
  • 4 TBSP butter
  • 1 can cream of celery soup
  • 1 can cream of mushroom soup
  • 1 can water

  • 1 lb boneless skinless chicken breasts

  • 4 TBSP butter
  • 1 can cream of celery soup

Instructions
  1. In a large mixing bowl mix together the box of Long Grain and Wild Rice Rice 'N Easy rice mix (including the seasoning), the can of cream of celery soup, the can of cream of mushroom soup, and 2 tbsp melted butter.
  2. Take the other 2 tbsp of melted butter and rub it all over a glass baking dish.
  3. Pour about a third of the mixture on the bottom of the dish and then top that with the chicken.
  4. Put the rest of the mixture on top of the chicken, wrap the top of baking dish tight with aluminum foil, and bake at 375* for 90 minutes.
  5. Enjoy!

    This looks really good! A nice fall/winter dinner :). I’ve never tried the long grain rice. Does it cook differently than regular rice?

    I have not tried Riceland’s mixes yet, but I’m going to. This looks like something my family will love and I know it smells amazing while it’s cooking.

    This is an awesome-looking recipe! I love your pictures and the flow of your directions.
