Turkey Cranberry Salad

I love Thanksgiving but after stuffing myself silly for a couple of days I need a break from heavy food. I have seen tons of post-Thanksgiving recipes out there for turkey soups, turkey pot pies, and all kinds of turkey sandwiches but I wanted something different this year…enter into the picture Turkey Cranberry Salad!! It was inspired by these yummy Cranberry Sage Triscuits no less, LOL!!

PS- have you tried these yet?? They are delicious!! Very savory and the perfect companion to my Turkey Cranberry Salad!!

This recipe is very similar to my Simple Summer Chicken Salad recipe, except you know, with turkey. LOL! I think I have mentioned on here that I don’t do fruit in my salads, it freaks me out. But the cranberries in the salad just make the whole dish.  I got dried cranberries and they are similar to raisins and very tart and I love them!! And since I have a big bag of them you may just find a few more cranberry inspired recipes on the blog soon…yum!

Here is a close up…makes my mouth water just thinking about it!! My secret to really making this salad last is to mix up the dry ingredients and when you are ready to eat just get out what you want and mix in the miracle whip at that time. That way it doesn’t get all soggy in the fridge because there is nothing worse than watery, soggy, Chicken or Turkey Cranberry Salad. Am I right??

The perfect post-Thanksgiving recipe on the lighter side!!

Ingredients
  • 2 cups turkey shredded
  • 3 celery stalks chopped
  • 1/2 cup pecans chopped
  • 1/2 cup dried cranberries
  • 1 cup miracle whip

  • 2 cups turkey shredded

  • 1/2 cup dried cranberries
  • 1 cup miracle whip
Instructions
  1. Mix all dry ingredients together.
  2. Add miracle whip in last, mixing to taste.
  3. Enjoy!!

    I love fruit in my salad. I’m a big fan of eating sweet and salty together. Those crackers sound yummy. I don’t each turkey or chicken, but I’m sure my husband would like this recipe.

    Oooh, new Triscuits! I love love chicken & turkey-based salads. Not a fan of Miracle Whip, but subbing in Hellmann’s should be delish!

    Thanks! My husband bought cranberries and I had no idea what to do with them! I’ll have to try this – except with out the pecans (allergies).
