The other day I posted this pic on Instagram and got a ton of feedback on it!! What is it you ask? The ingredients to my super yummy Chicken Salad of course!!
I think Chicken Salad is a perfect summer staple. I like to eat “lighter” foods during the summer so I don’t feel weighed down and yucky. I try and save my savory foods for winter…know what I mean? I am also (for some weird, unknown reason) totally against putting fruit in my chicken and tuna salads. Or any salads really. I don’t even like fruity dressings like Raspberry Vinaigrette. I know, I’m weird!
Anyway, I decided to jazz it up this time and bake my chicken instead of just boil it like usual. I rubbed it down with garlic powder, onion powder, salt, pepper, and olive oil and baked it until it was done. My whole kitchen smelled delish. I just love the smell of garlic and onions…LOL!!
I like my chicken salad a little “crunchy” so I added a ton of celery and pecans to it. I finished it off with a touch of Miracle Whip (I like the tanginess of MW) and it was just perfection!!
Now I ate mine right out of the bowl but I also love to put in on a wrap with some lettuce and swiss cheese. YUM!!
How do you eat your chicken salad? By itself? Do you add any fruits or different ingredients?

- 4 boneless skinless chicken breasts
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp olive oil
- 2 cups celery chopped
- 1 cup pecans chopped
- 1 cup miracle whip
Ingredients

- Preheat oven to 350*
- Mix garlic powder, onion powder, salt, and pepper together in small dish and set aside.
- Rub chicken breasts down with mix from above and lay out on a baking sheet. Drizzle the chicken with olive oil and then pop it all into the oven for 20-30 minutes or until chicken is done.
- Chop up celery and pecans and put them in a big bowl.
- When chicken is done shred it up and mix it with celery and pecans.
- Add miracle whip until salad is at it's desired consistency.
- Enjoy!
Sounds really good and especially easy to make. I make one very similar with rotisserie chicken. Pinning to my Summer Salad Series board :-)

I’ve been on a chicken salad kick this summer too. I found a super easy crock-pot recipe for it and I have been using it all the time!
This actually look good and seems easy to make. I pinned but will have to hold my nose when I toss in the Miracle whip.
I also have “summer” vs other season foods that I eat. Chicken salad is definitely a Summer one and this recipe looks delicious
