Yesterday at work I helped throw a baby shower for a co-worker and I signed up to bring a dip. Bringing dips to work is tricky. I always want something that doesn’t need to be heated up and something that I can make the night before and something that still looks pretty the next day. Enter into the picture…Pool Side Dip.
It’s called Pool Side Dip because it tastes super yummy poolside in the summer. I think it tastes good any time of the year though! Plus it fits my requirements of doesn’t need to be heated, tastes great the next day, and looks pretty. Wanna know the recipe? Good! Here you go…
- 16 oz cream cheese softened
- 1 pkg Hidden Valley Ranch Dressing mix
- 1 red bell pepper chopped
- 1 jalapeño chopped
- 1 can whole kernel corn
- Mix softened cream cheese with ranch dressing mix until smooth.
- Chop bell pepper and jalapeño and add them to cream cheese mix.
- Drain the can of corn and mix it into cream cheese mixture.
- Enjoy with chips or crackers!
What is your favorite go-to recipe to take places??

Oh my goodness, someone made this at a house party I went to with friends in the summer and I LOVED it but didn’t get the recipe or anything. I sure am glad you have it :)
