Poppyseed Chicken

Y’all it finally feels like fall around these parts. The weather has consistently been cool and I actually wore a jacket to work the other day!!! YES!!!! I have been craving some comfort food and looked in my fridge and realized I actually had all the ingredients for one of my fave meals…Poppyseed Chicken!!!

I have decided that Poppyseed Chicken is definitely a southern thing. I posted a pic while I was making it and got several emails of “what the heck is that??” LOL!!

Poppyseed Chicken is one of those super easy meals that is great to take to potlucks, to funerals, and when someone just had a baby. It looks weird but tastes AMAZING and once you have had it you will be hooked!

Ingredients
  • 2-3 chicken breasts
  • 16 oz sour cream
  • 3 tbsp poppyseeds
  • 1 can cream of chicken
  • 1 can cream of mushroom
  • 1 tube Ritz crackers crushed
  • 1/2 cup butter melted

Ingredients
  • 2-3 chicken breasts
  • 16 oz sour cream
  • 3 tbsp poppyseeds
  • 1 can cream of chicken
  • 1 can cream of mushroom
  • 1 tube Ritz crackers crushed
  • 1/2 cup butter melted
Instructions
  1. Boil chicken, cut into bite size cubes, and set aside.
  2. Mix together sour cream, poppyseeds, cream of chicken, and cream of mushroom until blended.
  3. Add cubed chicken to mix and blend together well.
  4. Pour mix into baking dish.
  5. Crush tube of Ritz crackers all over the top of the mix.
  6. Drizzle melted butter all over the top of the crushed Ritz crackers.
  7. Bake 20-25 minutes at 350*
  8. Enjoy!

    Hmmmm, poppy seed chicken seems interesting, I’ve heard ritz crackers are delicious in creamy recipes. I am willing to give this a try.

    Oh, this looks so delicious. I love adding RITZ crackers as a breading in dishes like this. I can’t wait to try this recipe this weekend! It looks fabulous.

    I’m in the South and we just call this chicken casseroles0! Whatever you call it though, it’s deliciousn! They serve it at pretty much every family or church dinner in our area.

    I made this recipe when I saw it on pinterest a few years ago. I thought it was delicious but my husband did not care for it at all. :(

    This poppy seed chicken recipe definitely does look like a great comfort food. I looked at the ingredients which look great and want to make it with my tofu chicken as I am a vegetarian.
