I posted a pic the other day of my newest recipe to try…Spaghetti Squash with Turkey Meat Spaghetti Sauce!
I have always wanted to try spaghetti squash but it is intimidating!! I went to my go to source for recipes, Pinterest, and found an easy recipe that hopefully wouldn’t involve blowing up my microwave. (Update: microwave and kitchen are still intact after making squash)
Here’s what I did…
First, get out your biggest and baddest knife and cut that joker in two length wise. You will scoop out all the seed and inside goop. You will know what to scoop out.
Then, you place it face down in a glass baking dish, put a half inch of water in the bottom of the dish and cover it up TIGHT with saran wrap. Think: steaming it.
Next, put the pan in the microwave for 10 minutes. When it’s done, take it out and check it. It should be
soft and stringy. Mine wasn’t so I nuked it for another 5 minutes and it was good to go.
When it looks all soft and stringy all you have do is scoop the spaghetti strands from the sides and your done!! Easy peasy!
To me it didn’t really taste like anything. I think spaghetti squash takes on the flavor of whatever you eat it with. And the best part? A cup and a half is only 40 calories! I will definitely be making this in place of real pasta for a lot of things!

I usually don’t like it, but if you put tomato sauce and try to make it like spaghetti, it’s not so so bad!
