Lighter Lasagna Soup {recipe}

Today I am going to share with you one of my very favorite recipes today…Lighter Lasagna Soup!

I LOVE lasagna but not necessarily all the calories associated with it. Shocker, I know since all I seem to eat is pasta these days…lol!! But this is seriously yummy y’all!! Lower calories and all!!

Before this recipe I and never used turkey sausage or whole wheat pasta and so I was pretty skeptical but I surprised at how much flavor it had! It also kept me full and has way less calories than regular lasagna or lasagna soup.

It’s a staple around my house during the cooler months! I hope you enjoy this soup as much as I do!!

Lighter Lasagna Soup

Ingredients
  • 1 lb ground italian turkey sausage
  • 1 tbsp evoo
  • 1 onion chopped
  • 1 bell pepper chopped
  • 3 cloves garlic minced
  • 32 oz chicken broth
  • 1 (14.5 oz) can rotel
  • 1 (15 oz) can tomato sauce
  • salt to taste
  • 1 tsp crushed red pepper
  • 4 whole wheat lasagna noodles broken up
  • 1 tsp basil
  • 1/4 cup Parmesan cheese
  • 1/2 cup mozzarella cheese

  • 1 (14.5 oz) can rotel
  • 1 (15 oz) can tomato sauce
  • salt to taste
  • 1 tsp crushed red pepper
  • 4 whole wheat lasagna noodles broken up
  • 1 tsp basil
  • 1/4 cup Parmesan cheese
  • 1/2 cup mozzarella cheese
Instructions
  1. Heat evoo, turkey sausage, onion, bell pepper, and minced garlic in large stock pot until sausage is brown and crumbly.
  2. Drain and return to pot.
  3. Add chicken broth, tomato sauce, Rotel, salt, and crushed red pepper.
  4. Bring pot to a boil and then reduce heat and simmer for 20 minutes.
  5. Break up lasagna noodles and add to pot.
  6. Bring to a boil and let simmer for 10 minutes.
  7. Remove from heat and add basil, parmesan, and mozzarella.
  8. Enjoy!

    Oh my… this looks AMAZING! I loveeee lasagna and I love soup! I will definitely have to try this!
