Jalapeño Cheddar Cornbread Muffins {recipe}

Last week I posted this pic of some super easy Jalapeño Cheddar Cornbread Muffins on my Instagram Stories and my inbox was immediately flooded with recipe requests…

I promised to get the recipe up on the blog soon so here it is! Finally!! LOL!!

I also realized after I promised to get the recipe up that I haven’t posted a recipe on here in a long time. My bad! I promise that I still love to cook and create yummy recipes but I have just felt so uninspired in the kitchen lately. I have been scouring Pinterest for new recipes but just haven’t found anything I am craving/want to make. I’m in a food funk!

But back to these yummy Jalapeño Cheddar Corn Muffins…the weather was super nasty and cold last week and I was in the mood for some comfort food so I went with a super easy (and filling) veggie soup. The thing I love about veggie soup is that you can put any type of veggies you want in it and it still tastes good! Plus since it’s packed with veggies I’m calling it a healthy recipe. HA.

I have done all veggies before but I usually add hamburger meat to mine. I rarely cook hamburger meat (I’m a chicken girl) so this gives me an excuse to use it. And I normally just use whatever frozen and canned veggies I have already in my freezer and cabinets. This particular soup was made with broccoli, cauliflower, green beans, carrots, stewed tomatoes and corn. And the previously mentioned hamburger meat. And I seasoned it with cajun seasoning. YUM!!

I normally make sweet cornbread like my Mama used to make to go with my veggie soup but this time I decided to spice it up a bit and make Jalapeño Cheddar Cornbread Muffins to go with it instead. I made it up on the fly with stuff I had in my pantry and they turned out pretty darn good if I do say so myself!

They are super easy to make, I just used a corn muffin mix I already had and mixed it up, added a can of creamy corn, some jalapeños, some jalapeño juice and cheddar cheese and baked it according to the directions on the box. They aren’t super spicy but added a nice kick to my meal!

I like to crumble my muffins up and mix them into the soup because why not? It was delicious!!

Jalapeno Cheddar Cornbread Muffins
Servings
Ingredients
  • 1 box corn muffin mix
  • 1 can creamy corn
  • 1/2 cup jalapeños diced
  • 1 cup cheddar cheese shredded

  • 1 box corn muffin mix
  • 1 can creamy corn
  • 1/2 cup jalapeños diced
  • 1 cup cheddar cheese shredded
Instructions
  1. Mix the Corn Muffin Mix according to the box.
  2. Add in the creamy corn, jalapeños, and cheddar cheese.
  3. Optional- add a few tablespoons of jalapeño juice to the mix!
  4. When everything is thoroughly mixed together scoop the mix out carefully into a greased muffin pan.
  5. Sprinkle the top of the muffins with cheddar cheese.
  6. Bake according to the corn muffin mix.
  7. Enjoy!

    Cornbread is very much comfort food and goes great with all kinds of soups. Like the addition of cream corn, jalapeños and cheese.

    A friend of mine likes anything and everything that spicy and hot. I know for a fact he would love this cornbread. The next time we have them over for dinner I’m definitely going to make these.

    The muffins look amazing! I make a jalapeno cornbread but haven’t made it into muffins. I love your veggie soup. I make it like you: whatever is on hand and hamburger!

    I think the last time I ever had cornbread was when I was like 14 years old in boarding school. And funnily enough, I think I am going to be making corn dogs for my recipe next week, yet never have had a corn dog in my life! We are just all kinds of corny now aren’t we ;)
