Cajun Sheet Pan Meal {recipe}

Happy Monday!! I hope you had a fabulous weekend!! I took a spontaneous trip to Memphis Saturday afternoon to use an IKEA gift card I got for my birthday and now I can’t wait to put together ALL THE THINGS I purchased…said no one ever. HA! But really, I am super pumped about what I bought, I am just not looking forward to putting it together. But when I do get it all put together I will share it with you here!! One day…LOL!

Yesterday I did a little meal prepping for the week and I was pretty exited about it. I have been making sheet pan meals and posting them to my Instagram stories for the past couple of weeks and I have gotten lots of questions about them so today I thought I would share one of my faves with you. I love making these meals because they are so easy to make and I can make them last through a week of lunches at work! Now that’s my kind of meal prepping!!

So without further ado my favorite sheet pan meal…Cajun Sheet Pan Meal!!

If you’re like me you have seen these meals floating around Pinterest for a while now. Maybe you’ve tried them, maybe not. I was digging through my fridge a couple weeks ago and trying to decide how to use all of the veggies I had bought that were about to go bad and, not wanting to make another pot of veggie soup, I decided to chop everything up, throw in some sausage, chicken and cajun seasoning and call it a sheet pan meal. I have to say, it was one of my better ideas.

You can use whatever veggies you have on hand, for this particular meal I had zucchini, yellow squash, green belle peppers and onions. I decided to slice everything instead of chop it into tiny pieces and I think I like it better this way!

For the chicken I just used a couple of boneless, skinless chicken breasts I had in my fridge leftover from a recipe I made last week. Before I throw them in the veggie mix I chopped them into bite sized cubes. I use a pair of kitchen shears I use specifically for this purpose. It saves a lot of time!!

After I chop/slice ALL THE THINGS I put it all intros big bowl, drizzle it in EVOO and sprinkle on some cajun seasoning. I LOVE cajun seasoning so I sprinkled on a lot but you can do as little or as much as you want. When it’s seasoned like you want you just throw it all on a sheet pan (I line mime with foil so nothing sticks) and bake it for 30 minutes on 350* or until the chicken is done. Some people will flip everything at least once but I just let it go.

You can also sprinkle some more cajun seasoning on before your throw it in the oven like I did here…

When it’s done I take it out of the oven and let it rest for 10-ish minutes before I serve it. I usually eat a bowl and then pack the rest into containers to take to work. This particular pans filled up four containers for work and I ate two bowls. This recipe is super low carbs I don’t feel guilty eating a lot of it in one sitting. It’s also pretty filling since it’s loaded with protein!

And there you have it friends…my Cajun Sheet Pan Meal! You should try it, its delicious!!

    That looks so good, and I’m in love with the ease of it. I have three kids, two, dogs, one husband, and a bazillion things to do, so I need easy!

    That looks tasty. I am a big fan of sheet pan dinners for those super crazy nights that I just can’t seem to get anything together fast enough. So much better than frozen pizza.

    Thank you so much for this idea! I love that it is easy and I am forever trying to find ways to use up all those extra veggies! Sometimes I have veggies left over but not enough of them to really utilize as a side dish or in other recipes! This solves the issue and plus, I do love Cajun!

    I don’t make nearly enough sheet pan meals. This looks absolutely incredible with the seasonings, all those vegetables, and sausage. Yum!

    This recipe not only looks easy but Tony Chachere’s seasoning is a favorite with all of my kids and my husband. So I am sure it would be a hit.

    Yes! I’ve been waiting for your recipe for this. It looks so good. I make something similar, but in a skillet. My kids like it. I’m going to try this cajun version though. I normally do a garlic version.

    Yum! I love sheet pan meals because they are so easy and quick to prepare. I’ve done it using butternut squash, broccoli and carrots too which I seasoned with salt and pepper.
