Pink Coconut Pie

I haven’t been in the kitchen much lately and I don’t even know why! However I did make this fantastically pink no bake pie a couple weeks ago and just knew I had to share the recipe with y’all!! I don’t know about you but I am a huge fan of no bake pies. Most of them remind me of summer and I am totally ok with that. So today I am going to introduce to you what I am calling the “Pink Coconut Pie” because it’s pink. And it has coconut. Original right?

So the foundation of this whole pie is a pre-made graham cracker crust. You can get fancy if you want and mix together your crushed up graham crackers and melted butter and press them in a fancy pie dish but who wants to do all that? Not me! HA! My kitchen philosophy is to work smarter, not harder so if I can get a pre-made crust that tastes probably better than I can make it then I am all for it.

So what’s this pie pink?? Maraschino cherry juice!! I think maraschino cherries have gotten a bad rap the past couple of years but I love them! They are great in drinks and even better in this pie. Ya hear me? It also has pineapples, chopped up maraschino cherries and pecans! I love pecans!! And of course it also has coconut flakes. I am also huge fan of coconut. A lot of people don’t like them because it’s a “texture” thing but I don’t get it. It’s coconut! YUM!

They thing about this recipe is that not only does it taste amazing but it’s a no bake pie so it holds up really well. No bake pies are perfect to take for potlucks or any type of gathering because like we all learned in Steel Magnolias the goal is to bring something that “freezes beautifully” or you know, holds up beautifully. Same thing really.

So basically if you like pie, coconut and cherry flavored things and pecans then you need to try this pie. Plus it’s pink. You just can’t beat that!!

Pink Coconut Pie

Ingredients
  • 1 graham cracker crust
  • 1 can sweetened condensed milk
  • 1 lemon juiced
  • 1 TBSP maraschino cherry juice
  • 1 cup coconut flakes
  • 1 15 oz can crushed pineapple drained
  • 1 cup chopped pecans
  • 1 cups maraschino cherries chopped
  • 1 1/2 cups Whipped Cream

  • 1 graham cracker crust
  • 1 can sweetened condensed milk
  • 1 lemon juiced
  • 1 TBSP maraschino cherry juice
  • 1 cup coconut flakes
  • 1 15 oz can crushed pineapple drained
  • 1 cup chopped pecans
  • 1 cups maraschino cherries chopped
  • 1 1/2 cups Whipped Cream
Instructions
  1. In a mixing bowl mix together sweetened condensed milk, the juice of one lemon and the maraschino cherry juice until well blended.
  2. Slowly add in the crushed pineapple (make sure it's well drained), maraschino cherries and pecans and mix well.
  3. Fold in the whipped cream by hand.
  4. When everything is pretty well blended pour into the graham cracker crust.
  5. Refrigerate for at least 4 hours (overnight is preferred).
  6. Enjoy!

    That sounds so good! This pie filling is very similar to a dessert my friend’s mom makes. We call it “pink stuff”. It’s yummy!

    This reminds me of some of those fruit cocktail flush, dessert things that I always see in the south. I don’t even know what they are called, but it’s a bunch of fruit (good too!)

    Love the festive pink for spring and Easter! Very clever to use the cherry juice for color over food coloring. I also adore anything coconut so I’m sure this will be yummy.
