It’s officially fall and that means all of the fall foods!! I am so ready for soups, casseroles, pasta and basically all the carbs. HA! I’ve been feeling fall for a while now and so I made one of my favorite comfort foods the other night, Tater Tot Casserole. It’s super easy to make and you will have leftovers for days. That’s my kind of meal!
While it may be super yummy and easy to make it doesn’t always photograph well, sometimes the best foods don’t. So don’t let these pics fool you, it really is delicious!!
A lot of people make Tater Tot Casserole and it can be a pretty basic meal but I prefer to “fancy” mine up and I add a secret ingredient. If you know me at all then you know I love ranch dressing on any and everything!! Now I don’t like actual ranch dressing on this casserole, that just sounds gross, but I do put a package of the dry ranch dressing mix in this casserole and it totally livens it up!
This recipe makes enough food to feed a family of six or more or if you are single like me you can eat on it for days! I usually freeze half of it in individual containers to eat later. Before I freeze it I usually sprinkle a little extra dry ranch on top to ensure it has some flavor when it’s reheated.
You can eat this dish alone and it’s completely satisfying but I usually eat it with some green beans or brussel sprouts just to get something green in my diet. HA! But really though…I feel bad if I don’t eat a veggie with my meals. I think I just adulted when I said that. What is happening to me??

- 2 lb ground beef
- 1 onion
- 16 oz sour cream
- 8 oz cream cheese
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 2 cups shredded cheddar cheese
- 1 packet Hidden Valley Ranch Dressing mix
- 1 2 lb bag frozen tater tots
Ingredients

- Chop onion and mix with ground beef. Brown until done and then set aside.
- In a large mixing bowl mix together sour cream, cream cheese, cream of chicken, and cream of mushroom soups.
- Add 1 cup of the shredded cheddar cheese and dry ranch mix to the soup mix and mix well.
- Add in ground beef and onion to the soup mix and mix well.
- Add entire bag of frozen tater tots and mix well.
- Dump entire mixture into a 9x13 baking dish and top with the rest of the shredded cheddar cheese.
- Bake on 350* for 30 minutes.
- Enjoy!

As a kid this was one of my favorite potluck dishes. Sadly, they don’t sell tater tots here in Costa Rica and I’m not quite sure how I’d make them from scratch, but boy oh boy would I love to dig my fork in DEEP!
