This time of year is so super busy with work and school and blogging that I don’t have time to plan out my meals too far in advance. I have eaten more sandwiches lately than I care to admit. Ugh.
I was at WalMart a while ago and spotted these new yummies in the frozen food aisle…
…and then I promptly forgot about them. I suck, I know.
Sometimes I like to play a game with myself called Iron Pantry. It’s similar to the old show Iron Chef where you have certain ingredients you have to cook with only in my game I make myself use what I have in my pantry and fridge that need to be eaten before I will let myself go grocery shopping. I have come up with some really great meals this way and yesterday was no exception.
I dug around in the fridge and found a brown rice/quinoa/garlic mix, eggs, and a purple onion. In the freezer I found those forgotten about Farm Rich® Smokehouse Dry Rub Pork and Birds Eye BBQ Corn and I was all set.
I have been seeing these amazing waffle iron recipes floating around Facebook and Pinterest and decided I would create my own “fried rice waffle” with the rice mix, onion, and Birds Eye BBQ Corn. I mixed everything up and put it in the waffle iron…
…unfortunately the rice mix never came together like I wanted it to and was just a big ole mess so I went with plan B, a rice bowl!! The rice mix did come out out hot and crispy which I loved, I just wish it held together in a waffle shape.
I heated up the Farm Rich® Smokehouse Dry Rub Pork in the microwave and mixed it in with my rice…
…and then I topped the whole thing with a drizzle of BBQ sauce and a fried egg. Because everything is better with a fried egg, am I right?
And that my friends is how my not-so-famous BBQ Rice Bowl was made!!
One day I will figure out how to make “fried” rice in my waffle maker but yesterday was not the day. I’m still mad about that but I will just keep trying. And you know what? That rice bowl turned out pretty amazing if I do say so myself!

as soon as I saw the waffle iron I was confused! bummer it didn’t work out the way you had planned, it does however sound like your rice bowl had tons of flavor! The egg on top probably gave it the perfect touch!

I would never have thought to use a waffle iron for anything other than waffles, but the end result looked good to me! I love bbq everything!

I am going to look for this in my store. I don’t recall seeing it, but maybe wasn’t looking in the right place. The recipe looks amazing and I love anything that is BBQ and has rice! Both are my favorites!
