Protein Balls

I am always looking for snacks high in protein. You can only eat almonds and string cheese for so long without getting bored. Am I right? I have seen a lot of protein ball recipes floating around Pinterest but have never found one I just loved. They always had weird stuff in them or just looked gross. Sorry ball makers!!!

So I decided to mix it up and make my own. I combined a few of my favorite ingredients from different recipes and voilà…yummy Protein Balls that I could eat all day long!!

 Don’t they look delicious?? I may or may not have eaten four of them right after making them!!

My recipe is below but don’t be afraid to modify it if you want! I thought I had some flax seeds but I am out or I would have out those in as well. You could also put chia seeds, any kind of nuts, mini chocolate chips instead of regular (I found some regular size on clearance at Target so that’s just what I used), anything you want!

Ingredients
  • 1 cup oatmeal
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 2/3 cup coconut flakes
  • 1/2 cup chocolate chips
  • 2 tsp vanilla

  • 1 cup oatmeal
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 2/3 cup coconut flakes
  • 1/2 cup chocolate chips
  • 2 tsp vanilla
Instructions
  1. Mix all ingredients up in a mixing bowl until well blended.
  2. Chill in refrigerator for 30 minutes.
  3. Roll into balls.
  4. Keep in refrigerator at all times.
  5. Enjoy!!

    These do look super simple. I’d probably drop the coconut, only because my daughter isn’t a fan. But I do want to try some soon and this might be the perfect recipe to give a shot!

    I’ve made some similar to this. Honestly, I wasn’t sure if my kids would like them. But they love them! My son calls them the muffin man, and we can’t figure out why, but it’s hilarious!

    I love that you added chocolate chips to yours. I have been making these, but using chia seeds to give me the fuller effect (because they expand). I made these not too long ago and subbed in almond butter and they were amazing! They are super easy to make and give you the perfect amount of sweet when you need to cut your sweet tooth.

    I have seen these a few times floating around on the internet. My only concern, do they really taste ok or the same as the cardboard protein bars you find in health stores? May have to give them a shot! Thanks for sharing your recipe!

    I make some sort of energy bar or ball at least once a week. The store so well in the freezer and they are the perfect healthy snack! Have you tried adding vanilla bean powder to them? It’s delicious!
