If I am being completely honest I could totally eat nothing but sides for Thanksgiving and be totally content. Don’t get me wrong, Turkey is great but the sides are what makes the meal.
I love them all…Dressing, Mashed Potatoes, Green Bean Casserole, Cranberry Sauce, Deviled Eggs, Homemade Rolls, Mac and Cheese, and Sweet Potato Casserole (Ok, I actually don’t like this but you can’t talk about Thanksgiving and not mention it)!! And then there are my two absolute favorites…Hashbrown Casserole and Hot Corn!!!
Hashbrown Casserole hasn’t always been an absolute favorite but a couple years ago I perfected my recipe and now I can’t so turkey day without it!! I made it last night and my kitchen just smelled absolutely divine!! I found a couple recipes on Pinterest and tweaked them and made it my own. My tweaks may or may not have included a hunk of cream cheese. And you know when there is cream cheese involved everything tastes better!!! Recipe is at the bottom of the post.
Hot Corn is something I had for the first time last year and have been obsessed with ever since. It’s super easy to make is quick to bake so that’s a win win in my book. It’s creamy and kind of spicy and just goes well with everything, especially turkey and dressing!! PS – do you say dressing or stuffing?? I say dressing!!
Hashbrown Casserole:

- 2 lb frozen tatertots
- 16 oz sour cream
- 8 oz cream cheese softened
- 1 can cream of chicken
- 1 cup onions chopped
- 1/2 cup butter
- 2 cups cheddar cheese shredded
Ingredients

- Chop onion and saute in butter until soft, not totally clear though because you are going to bake them too.
- In a big bowl mix sour cream, cream cheese, shredded cheese, cream of chicken, onions, until well blended.
- Add in frozen tater tots slowly until well coated.
- Dump everything into a 9x13 baking dish and bake at 350 for 45 minutes or until brown on top.
- Enjoy!
Hot Corn:

- 16 oz cream cheese softened
- 2 cans whole kernel corn drained
- 2 cans rotel drained
Ingredients

- Mix all ingredients in a mixing bowl until well blended.
- Bake for 20 minutes at 350*
- Enjoy!

YUM! I could totally skip the turkey and dressing and head straight into the sides and dessert. We make a similar hashbrown casserole (though we eat it for breakfast) and it is AMAZING. My true love at family meals is mashed potatoes–I could eat them until I passed out!

I say dressing, but most of my friends say stuffing.
We’ve done hash brown casserole for breakfast before; I never thought about it as a side dish for other meals. So yummy!
