It’s officially soup season y’all!! My favorite!!! Or at least that seems to be all I’m cooking lately…LOL! Here’s a new recipe for Crawfish and Corn Chowder that I got from Pinterest, but of course I adapted it to fit my needs. It is spicy and yummy and reminds me of home! Here it goes…
Ingredients:
3 stalks celery, chopped
1 large onion, chopped
1 large bell pepper, chopped
Couple cloves of garlic, minced
2 Tablespoons butter
2 Tablespoons Cajun Seasoning (Tony Chacheries is what I use)
1 can Rotel tomatoes
1 lb Crawfish Tails
2 cans creamed corn
1 can corn kernels
1 can evaporated milk
Instructions:
1. Saute first 6 ingredients over medium heat about 5 minutes.
2. Add Rotel and cook another 5 minutes, stirring occasionally.
3. Add Crawfish, corn, and milk, cover and simmer about 20 minutes and viola! You’re done!!
And that’s all there is to it! I used to be intimidated by “chowders” because they just sound like something that would be hard to make but really it’s just another soup recipe and surely by now y’all know how soup obsessed I am. LOL!!

This is going to be the year that I finally attempt to make a gumbo from scratch, roux & all. I won’t consider myself a proper Cajun woman until I can do that. :)

I live in Houston, TX and we LOVE crawfish! I am excited about trying this soup recipe! I’ve wanted to make it in the past but like you have been intimidated by it! Now I’m like…SERIOUSLY? Is that all?!?! It looks and sounds delicious! I use “Slap Yah Momma” for cajun spice and I’m sure I’ll chop a few shrimp into the pot as well! Yumm…Hello fall! Thank you for sharing!

This post is old and the photography (if you could even call it that) is terrible but trust me when I say that the soup is AMAZING!!! I love me some Slap Ya Mama, that’s my parent’s go to for cajun seasoning!!

I’m from Louisiana where crawfish is the fifth food group! This recipe is amazing– I add some more spice since we are immune to it here and just use 1/2 and 1/2 rather than evaporated milk! Delicious!!!
