Chicken & Sausage Jambalaya
  1. Chop chicken into bite size pieces and put into a large stockpot with a tablespoon of oil and sauté until done.
  2. Chop up the kielbasa sausage and add it to the chicken in the stockpot.
  3. Add in the two cans of stewed tomatoes, the Rice ‘N Easy Spanish Rice mix, and the cajun seasoning. Also add in the water as directed on the Rice ‘N Easy box.
  4. Bring the mixture to a boil, cover it, and bring it down to a simmer and let it simmer for 13 minutes.
  5. Take off the heat and let it sit for another 2-3 minutes to let the liquid absorb a little.
  6. Enjoy!
