Breakfast Quesadillas
  1. Scramble your eggs, or prepare them any way you like, in this recipe anything goes!!
  2. Set eggs aside and in the same pan lay your tortilla down and sprinkle with shredded cheese. I spray a little olive oil in my pan before so the tortilla won’t stick!
  3. When cheese is melted add your eggs and veggies on one side and then flip it closed.
  4. Cook for a minute or two and then remove the whole thing from the pan and cut into strips.
  5. Enjoy!
